really just a maturity thing, and something she will eventually grow out of as she becomes more secure with herself as a person. 7th grade is a funny time, girls are paranoid about not fitting in and about being perceived as little kids. a rough age because it is true that they are no longer small children, but they have not yet reached adulthood (they are in a limbo stage, I guess, lol)

It really bother you this much, but if you really want her to stop mimicking you, just keep her in the dark when it comes to your personal life. It be hard since you have a long-distance friendship going on with her anyway. tell her about your favorite websites or anything that is really personal to you; in fact, you might try asking her about her own interests or whether or not seen any good websites. Encourage her to be her own person, if she tells you she really enjoys a pop singer for instance, you could say, "Oh yeah, that singer rocks!" This will give her a boost of confidence, something she seems to be in dire need of, and with more confidence in herself and her own personal interests, the less need she will have to latch onto someone else's.
